This cookie recipe is one of my all time faves. My grandma used to make them in rotation with chocolate chip and raison, and we would raid her cupboards every visit to gobble them all up.
They are so easy and full of wonderful flavours. Either crispy or chewy, you can’t go wrong.
What you’ll need:
3/4 cup butter or margarine
1 cup brown sugar
1 cup oats
1 cup flour
1/2 cup coconut
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla
1 egg
What you’ll do:
Preheat oven to 350º.
Cream butter or margarine. Add brown sugar, vanilla and egg and blend well.
Add in remaining ingredients and mix until well combined.
Drop by the spoonful onto a cookie sheet.
Bake for 8-10 minutes.
Let cool completely before storing in an air tight container.
