porridge pancakes


Prep time: 5 min         Cook time: 15 min          Makes: 3-4 servings


Brandon and I went camping for the last long weekend of the summer and I really like making food that’s more than your typical camping menu.  It’s so easy to eat hotdogs and s’mores all weekend (don’t get me wrong, they are great too!) but this time we made one of my oldest favourites – porridge pancakes.

Back in the day my friend Erin and I would have sleepovers all the time and I would beg her mum to make these for breakfast.  Years passed, and Erin came to visit a couple years ago.  She treated Brandon and I to breakfast and supplied her mum’s recipe!  I hope she doesn’t mind me sharing!

What you’ll need:

1 1/2 cup oat bran
2 teaspoons baking powder
4 tablespoons sugar
1/2 teaspoon salt
1 egg
1 1/4 cup milk
2 tablespoons melted butter

What you’ll do: 

Mix oat bran, baking powder, sugar & salt.
Beat egg and add milk.
Stir into dry ingredients.
Add melted butter and stir.
Best served with fresh fruit and maple syrup.
