Bruschetta has got to be one of the most delicious appies there are. Not only is it so tasty but it’s also so simple to make! I wish I could make it for every dinner I host but no one needs that much bread. However, after the last time I made it when I made way too much mix I discovered it’s also a great addition to a chicken dish, or in a salad.
What you’ll need:
4-5 roma tomatoes
2 garlic cloves, crushed***
5-6 fresh basil leaves
drizzle of olive oil
1 tablespoon balsamic vinegar
salt to taste
1 baguette
mozzarella cheese (optional)
What you’ll do:
Preheat oven to 300º.
Slice baguette on an angle, about 3/4 centimetre thick.
Using a pastry brush, brush olive oil onto each piece.
Toast bread until just slightly crunchy.
Mix all ingredients and set aside to blend together, ideally at least 30 minutes.
Spoon mixture onto toasted bread. Sprinkle with mozzarella cheese if desired.
Broil until cheese melts or mixture warms slightly.
Serve immediately.
*** A fun note on garlic. My brother in law taught me a HUGE garlic hack. When you buy a bundle of bulbs, peel a number of them at once and throw them all in the food processor. You can then freeze it all in a ziplock bag and cut off chunks as you need them. It’s a huge help when preparing a meal! Thanks Fouad!
