tzatziki


Prep time: 10 min              Makes: 2 1/2 cups


I always thought tzatziki would be a tricky dip to make.  Years ago I wanted to make it for a going away party but sadly I had mono, so I had to watch my friend make it from a distance.  Back then I don’t think greek yogurt was as readily available as it is now.  Or I just lived under a rock and didn’t know much about it.  Now, with time, I think I’ve created a pretty tasty version that is sure to please any crowd, or accompany a souvlaki nicely.

Tzatziki

What you’ll need:

2 cups greek yogurt
3 cloves garlic, pureed
1/2 of a cucumber, finely diced
juice of 1 lemon (watch for seeds)
1 tablespoon fresh dill
salt to taste

What you’ll do:

Mix all ingredients together.  Cover and let sit in the fridge for at least 2 hours before serving.  The flavour only gets better the longer they sit for.

This is nice to have just wth pita, or with a whole Greek style meal.
