cream puffs


Prep time: 15         Cook time: 30 min          Makes: loads of puffs


 

These are the best little bite sized treated to serve.  Today we are hosting a BBQ so I made some with a side of chocolate dipping sauce.

I feel like people get spooked sometimes at the thought of making pastry, but this choux pastry is actually very simple as long as you follow the directions.

What you’ll need:

1 cup boiled water
1/2 cup margarine
1 cup flour
1/2 teaspoon salt
4 eggs (unbeaten)

What you’ll do:

Preheat oven to 425º.

Have water rapidly boiled in saucepan.  Add margarine and stir until melted.

Reduce heat and add flour and salt.  Stir quickly until blended.

Continue cooking and stirring until mixture leaves sides of pan in 1 mass (about 1 minute).

Remove from heat (this is key!).

Add eggs 1 at a time and beat into mixture (about 2 minutes each).

Lightly oil a cookie sheet and using a piping bag, drop about a tablespoon for each puff about 1 inch apart.

Bake at 425º for 10 minutes.

Reduce to 350º and bake for another 20 minutes.

Once puffs are cooled, pipe whipped cream into the centre and service with chocolate dipping sauce:

What you’ll need:

1/3 cup cocoa
2 teaspoons cocoa
1 1/2 tablespoon boiling water

What you’ll do:

Mix all ingredients together well until smooth.

Serve immediately.
