For as long as I can remember my stepmum Monica has made the most incredible chewy oatmeal chocolate chip cookies I think I’ve ever had. Crowds flock to them and they are always the first to go.
Over time I have put my own spin on her classic recipe and come up with these:
What you’ll need:
1 cup butter
3/4 cup sugar
3/4 cup brown sugar (packed)
3 eggs
1 1/2 teaspoon vanilla
2 cups flour
1 teaspoon salt
1 teaspoon baking soda
2 cups oats
1 1/2 cups chocolate chips (i prefer mini chips)
1/4 cup milk and white chocolate rounds
What you’ll do:
Preheat the oven to 325º.
Cream together butter, sugars, eggs and vanilla.
Stir in flour, salt, baking soda and oats. Mix well.
Stir in chocolate chips.
Drop by tablespoonfuls onto lightly greased baking sheet.
Bake for 15 minutes.
Remove and place onto cooling rack.
While the cookies are cooling, using a double boiler to melt the chocolate rounds separately and drizzle over the cooled cookies with a spoon.
